Popcorn Lemon Cheesecake

Here’s one way to fizz up a classic pudding! Anna from scrumptiousandnutritious created this beautiful cheesecake using our Lemon Sherbet popcorn and we think its perfect, especially when topped off with some pretty summer flowers! Check out her Instagram for more fruity food inspiration!

 

Popcorn Lemon Cheesecake 

Ingredients 

250g Digestive Biscuits

2 Bags Portlebay Lemon Sherbert Popcorn

100g Butter

500g Mascarpone

2 Lemons

300g Lemon and Lime Marmalade

3 tbs chocolate curls

 Method 

  1. Mix all the digestives and 2/3 of a bag of Portlebay popcorn in a food processor. Crush the remaining 1/3 bag with your hands and mix into the crumbs.
  2. Melt the butter and mix into the biscuit and popcorn mixture.
  3. Pour the mixture into a greased tin and press the mixture down until it’s all flat.
  4. Combine the mascarpone with the juice and rinds from the lemons and chocolate swirls, then stir well.
  5. Melt 200g marmalade with a couple of tablespoons of water, keep stirring until it becomes smooth. Then mix in with the mascarpone.
  6. Pour the mixture on top of the biscuit and popcorn base and spread it out to the edges.
  7. Melt 100g of marmalade with 1 tablespoon of water until smooth, then pour on top of the cheesecake
  8. Put the cheesecake in the fridge and leave to set for 24 hours.
  9. Once set, decorate the cheesecake with the rest of the chocolate swirls and a bag of Portlebay Lemon Sherbert Popcorn!

The smell of fresh cut grass lingering in the air, summer blooms sprinkling the landscape with bright, beautiful colours, bees and butterflies bustling around keeping busy and Pimm’s O’clock now a daily necessity- oh it must be summer! HOORAY!

After many months of wind, rain, doom and gloom, us folk in the UK just can’t help but rejoice at the first sight of sunshine. We can finally escape the winter hibernation and take up residence at one of the many glorious beaches we are so lucky to have. As Summer is a big deal, we believe that it should celebrated and welcomed in a truly joyful manner. So, here are eight ways to celebrate the sunny season and make the most of the sunshine!

1. Be a Beach Babe

Go on a mini adventure and seek out a new beach that you’ve never visited before. Explore some caves, play in the waves, build a sandcastle! In Devon, our gorgeous home, there are soooo many hidden beaches to discover and no single beach is the same!

2. Make The Most of Those Summer Events

There are always loads of events organised for summer, so why not make the most of them?! Some events you can keep an eye out for:

  • Festivals- music, art, cultural, sports, entertainment, craft
  • Flower Shows
  • Outdoor Cinema
  • Food and Drink Fairs
  • Farmers Markets
  • National Trust

3. Make Some Summer Sangria

What better way to celebrate summer than making Sangria. Grab that red wine, it’s time to revel in the sunshine!

4. Just Relax…

Take some time to genuinely enjoy the summer. Read a book, watch the sunset, take a stroll in a picturesque location. Often at home we forget to press pause on our hustling and bustling lives and don’t take time to just chill out- be it long or short have a stay-cation!

5. Organise a Summer Shindig

Get your friends and family together and make the most of those long summer evenings. We’re talking bbq, salads, drinks and games!

6. Spend Time as a Family

It can be hard to find time and to find an activity to suit everyone in the family, but there is no better season than summer to get the family together. Here are a few ideas for the whole family to get involved with:

  • Go for a bike ride
  • Play mini golf
  • Build a sandcastle or an entire sand village
  • Go camping- even if it’s just in the garden!
  • Go to a pick your own farm
  • Make a butterfly garden

We are all busy bees and keeping up with our daily tasks is made 100% easier with the help of technology. Sometimes though, it’s nice to just enjoy the people and environment around us. Here are some more traditional forms of entertainment that can be even more fun than our normal digital pastimes:

Popping Into Father’s Day Like ….. What’s Your Flavour?

Firstly let’s just give a massive shout out to all the dads out there who are absolutely amazing!

You’re all fantastic & deserve the best day ever!

Father’s Day for Daddy Chris this year was spent doing the things he loves the most. That definitely included driving his car, eating, spending time with his family & being able to enjoy the silly moments in life!

We enjoyed family time in the sun at Dalkeith Country Park, while having one of my famous picnics… (I’ve had a lot of practice & guidance as we used to have them every other weekend as kids.)

We enjoyed some favourites while talking, playing with Cailyn & laughing together.

Cailyn gave Chris his Father’s Day card that we made for him and a funny poster which she helped me make, as daddy really does eat all the popcorn…

13 bags in one day to be precise.

Chris loves us making him cards, as it’s personal and something he can keep until he’s old and grey! I think the personal touches are far lovelier than just buying a card or gift off the shelf, as it’s rare to find a card that captures your relationship with that family member or person you’re addressing. So make your own card this Father’s Day, either with pens and paper or personal photos, and I’m sure it’ll be the best card they have received to date!

After eating our sandwiches, Cailyn gave Chris his present of popcorn, which he was obviously over the moon about, but there was only one draw back… he had to share with Cailyn. You see she’s just as crazy about it as he is. It’s so amusing to watch them both sit together and just shovel in handfuls of the stuff while reaching for more and more……Hello hamster cheeks!

Who would’ve thought that Popcorn would be the one thing she would eat with her dad and only with her dad, she will never eat popcorn whilst sitting with anyone else like she does with Chris. Cailyn will cuddle up with him and just sit there until it’s all gone.

With some things, she’s definitely her father’s daughter.

They really can’t get enough of the stuff, so when Portlebay Popcorn sent over some of their delicious flavours for Chris to try it certainly put a smile on his face and Cailyn was clearly happy too as whatever he eats so does she.

You wouldn’t think that something as simple as popcorn would create such a bond, a memory, a special “thing” with someone, but they really do have that and I absolutely love watching it! Cailyn will always offers you some of their popcorn, while Chris just eats and will only think of you when there’s just the crumbs left at the bottom of the bag.

After taking Cailyn to the play park, we took a walk along the woodland path that led to a field of wild flowers, myself and Cailyn whipped our shoes off and became one with nature, just enjoying the sun.

Cailyn then took off with the her bag of popcorn and sat herself down in the flowers- the cutest thing ever, as she looked around for Chris to see if he was watching her. She has the most amazing & beautiful little ways, whilst also being such a fierce little Madame. She seems so far from being just a little 18 month old baby – she’s already one hell of a smart, talented & kind little lady who is so head strong, and we just love it!

Portlebay have an array of different, delicious flavours and I must say that Lightly Sea Salted, Chilli & Lime and Lemon Sherbet are my favourite flavours, Chris is still deciding as he loved them all & Cailyn, well she’ll eat anything too.

We will definitely be buying more packs of Portlebay Popcorn, as I for one need more Chilli & Lime in my life. It’s that good that I get cravings for it and I’m not even that big of a popcorn fan (unlike the other two!)
